Apricot Glazed Chicken Breast

July 28, 2020 by Holly Ford 1 Comment

Apricot Chicken

I like all kinds of sticky glazed chicken dishes, such as sweet & sour chicken, lemon chicken, orange chicken, General Tso, and etc. Those sweet and salty tasting sauce makes the chicken somehow alive.  However all the dishes I mentioned are deep-fried, which I don't mind but try not to consume too often. Here is another great sticky glazed chicken dish; apricot glazed chicken breast! And this chicken dish is not deep-fried, and so easy and quick to make. Who wouldn't love the sticky ...

Devil’s Chicken

Devil's Chicken

Devil's chicken (Pollo Diablo) is a spatchcock chicken marinated with olive oil, lemon, chilies, and roasted in a high heat oven. Once roasted, immediately rub the chicken with butter paste made with shallow, garlic, parsley and broil it to get the charred look. You will have juicy tender chicken in every piece with lots of wonderful flavor. Check my YouTube video for tutorials. ...

Crispy Chinese Lemon Chicken

May 5, 2020 by Holly Ford 3 Comments

Crispy Chinese Lemon Chicken

Crispy Chinese Lemon Chicken is a classic Chinese takeout recipe that many people love. Chicken breast meat is deep fried and then coated with a tangy sweet and sour lemony glaze.  It is one of my all time favorite Chinese style chicken dishes. If you like sweet & sour tasting dishes, this will surely satisfy your craving. Deep frying the chicken twice will ensure the crispy texture of chicken and remain its crispiness for a long time even after they are coated with the  lemon ...

Spicy Korean Chicken Stew, Dakbokkeumtang

The Most Delicious Spicy Korean Chicken Stew

Here is the most delicious spicy Korean chicken stew recipe (aka Dakbokkeumtang or Dakdoritang) that will make you want to lick your fingers. With simple household vegetables like onion, carrot, and potato, this authentic spicy Korean chicken stew is hearty and very easy to put together. You can whip things up fairly quickly, too. Korean Chili Paste vs Korean Chili Flakes Most people use more of Korean chili paste (aka gochujang) in the spicy Korean chicken stew (Dakbokkeumtang) sauce but ...

Spicy Korean Chicken Soup (Dakgaejang)

November 15, 2019 by Holly Ford 3 Comments

Spicy Korean Chicken and vegetable Soup

When the weather outside is cold and wet, I am thinking of a bowl of very spicy soup. Koreans love their winter soup with strong heat and this spicy Korean chicken soup(dakgaejang) will hit the spot. If you are fond of spicy Korean beef soup (yukgaejang), you will love its chicken version but simplified.  The traditional way of making yukgaejang takes time and some effort. I like things simple even in the recipe. So here is my version of spicy Korean chicken soup (dakgaejang) that is easier ...

Korean Chicken Noodle Soup (Dak Kalguksu)

October 29, 2019 by Holly Ford 5 Comments

Korean Chicken Noodle Soup

Every country has its own unique kind of chicken soup in their cuisines. Korea is not exclusive. Korean chicken noodle soup (Dak kalguksu) is a soul comforting chicken soup just like other chicken soups. The whole or parts of chicken is simmered with natural Korean herb to make a batch of earthy broth, then cooked together with noodles and vegetables to serve as one pot meal. You will need to serve with the soy chili topping sauce to punch up the flavor. The easy and convenient way to make ...

20 minutes Chicken Mango Stir-fry

October 12, 2017 by Holly Ford 2 Comments

Chicken Mango Stir-fry

I had this chicken mango stir-fry at one of my favorite Asian bistro restaurant the other day. I loved it very much that I decided to replicate at home within 20 minutes from start to finish. The sweet fragrant mango slices go so well with lean chicken breast. With the addition of crunch green pepper makes this chicken mango stir-fry to be a quick and easy weeknight meal. I am not a huge fan of sweet main dish, but this one is a keeper. It is much healthier and quicker to make than any of ...

Baked Sweet and Spicy Sticky Chicken Wings

February 27, 2017 by Holly Ford 4 Comments

Baked Sweet and Spicy Sticky Chicken Wings

Oh, boy~! I wish I made more of these wings. These baked sweet and spicy sticky chicken wings were so yummy that I regretted that I only made a small amount. There were four hungry people in the house when I put them on the table. These wings were gone in less than 5 minutes. What was I thinking? These baked sweet and spicy sticky chicken wings are slightly different than my Korean fired chicken wings. I guess these are healthier since they are baked instead of fired? You can whip up the ...

Chicken with Mustard Cream Sauce

When someone in my family asks me the question, "What's for dinner tonight?", I won't hesitate to say "Chicken with Mustard Cream Sauce, baby!". We eat chicken breast quite often just like millions of other families in all over the world. There are gazillion ways to cook chicken breasts. Here is one easy and *muy-deliciosa* chicken breast recipe that can please any family members in the house. The lean chicken breast is pounded to insure the tenderness, then salted and coated with ...
