Perilla oil (deulgirum, 들기름) is a type of vegetable oil derived from perilla seeds. The leaves of the perilla plant is commonly consumed Korean herb called kkaennip (깻잎).Perilla oil has distinct nutty aroma and taste.

The oil is produced by cold-pressing toasted perilla seeds. It is used as a flavor enhancer, condiment, and cooking oil in Korean cuisine. It is a good source of omega-3 fatty acids, and it can also be an aromatic ingredient for salad dressings.

Just like the sesame oil, perilla oil also has a low smoking point, therefore you should be cautious when pan-frying with perilla oil. Always use low heat when cooking or add at the end of cooking step. I recommend mixing this oil with other high smoking point oil when cooking with perilla oil over higher heat.

How to store perilla oil

Perilla oil goes rancid pretty quickly so it is best to refrigerate and use as soon as possible. I recommend purchasing a smaller bottle of perilla oil if you are not using it often.
