Korean Mustard (Yeongyeoja)
Korean mustard (yeongyeoja, 연겨자) is Korean prepared mustard made from ground mustard seeds.
The mustard adds sharp spiciness to noodles dishes like mul-nangmyeon, bibim-nangmyeon, Korean chicken salad, cold buckwheat noodles. It also used as a condiment to many Korean dishes, such as in Bulgogi hotpot, where you want to add the mustard flavor in the dish. The sinus clearing piquancy is often compared to Japanese wasabi.
Yeongyeoja has a deep yellow color and you can find it easily in Korean grocery stores. They are sold in tubes like toothpaste. Don’t get confused with American yellow mustard. Korean mustard is much spicier than the American one.
Homemade Korean mustard
You can make homemade yeongyeoja If you can’t find the commercially made one.
Simply mix 1 tablespoon of mustard powder with 1/2 teaspoon of water and allow mixture to stand for 5-10 minutes before serving.
