This classic kimchi jjigae recipe will help you easily create a soul comforting Korean stew.
– sour kimchi & kimchi juice – pork belly – Korean chili flakes (gochugaru) – onion & garlic – water – rice cake rounds, optional – Korean salted shrimp – Korean soup soy sauce – soft tofu – green onion
Cook pork belly: Heat oil in a pot over medium high heat. Add pork belly slices and cook throughly.
Add onion: Add onion and garlic, and cook for 1 minute.
Add gochugaru: Add Korean chili flakes and toss everything to coat.
Add kimchi and liquids: Add kimchi, kimchi juice, water and rice cakes (if using). Boil and simmer for 15-20 minutes.
Season: Add salted shrimp snd Korean soup soy sauce and stir the stew.
Add tofu: Add tofu slices and simmer for another 5 minutes.
