Som Tam is an exotic salad made with unripened green papaya, snake beans, tomato, red chili, and dried shrimp. The signature fish sauce dressing brings the refreshing taste to this Thai salad.

Ingredients you'll need

cherry tomatoes

garlic

palm sugar (brown sugar)

fish sauce

green papaya

snake bean (green beans)

peanuts

lime

red chili

cilantro

Step 1

Shred Papaya

Peel and remove the seeds inside papaya. Shred using a mandolin or vegetable julienne peeler, into thin strands.

Step 2

Tenderize

Put papaya in a large zip bag and pound  until slightly soft and tender. Add the snake beans slices and continue to pound until beans are soft and slightly bruised.

Step 3

In a small mortar, put garlic and chili and pound until they become a chunky paste.

Step 4

Add fish sauce, lime juice and stir everything in a grinding motion with a pestle until the sugar is dissolved.

Step 4

Tenderize

Combine all the salad ingredients. Pour the dressing over and toss everything. Serve immediately.

Enjoy Papaya salad alone or with rice for a light meal. It also makes a great appetizer before the main course.
