Lemonade Scones

These lemonade scones are made with cream, lemon soda, and the zest of fresh lemons. They are quick to put together and lemony delicious.

Ingredients

  • 2 cup self-raising flour, sifted see note below
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup (125 ml) cream
  • 1/2 cup (125 ml) Sprite or any lemon flavored soda
  • 2 teaspoon lemon zest
  • 1/2 teaspoon lemon extract optional
  • 2 tbsp (30 ml) milk to brush

Instructions

  • Preheat oven to 400ºF.
  • Sift flour, sugar and salt in a large mixing bowl. Add soda, cream, lemon zest and lemon extract, if using, in the bowl and mix until just combined.
  • Turn out the mixture on the floured surface and bring together. Pat it down to make 3/4-inch thick disk, about 7-inch in diameter.
  • Cut into 6-8 wedges or use a round biscuit cutter. Place on the baking tray and brush with milk.
  • Bake for 10-15 minutes until the top is golden. Serve warm with your favorite jam and whipped cream if you wish.

Notes

To make self-rising flour, combine these three ingredients:
  • 1 cup all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon salt
