Pineapple Fried Rice

All-Time Favorite


Leftover jasmine rice is stir-fried with fish sauce, oyster sauce, curry powder, and turmeric powder. Fresh pineapple chunks add the perfect balance of sweet and savory that will awaken your taste palette.

Ingredients you'll need


frozen peas


pork floss  (optional)

ginger paste

oyster sauce


fish sauce

leftover rice

Step 1

Scoop out the pineapple and leave a hollow space in the middle. Dice the pineapple fruit into 1/2 inch chunks and reserve 1 cup.

Mix fish sauce, oyster sauce, sugar, curry powder, and turmeric powder in a small bowl; set aside.

Heat oil in a wok. Add shallot, garlic, ginger, and chili and stir-fry until fragrant; about 30 seconds.

Add shrimp, green onion, and red pepper Continue to stir fry until shrimp is no longer pink; about 1-2 minutes.

Add rice and peas. Continue to stir-fry until everything is mixed well.

Drizzle the sauce around and toss until everything is well incorporated.

Add the pineapple chunks and heat through. Garnish with cilantro.

Serve pineapple fried rice in fresh pineapple boats and garnish with pork floss, if using.
