Chicken Pumpkin Curry with Homemade Thai Yellow Curry Paste

Chicken Pumpkin Curry with Homemade Thai Yellow Curry Paste

I felt like having a bowl of very flavorful curry the other day. I haven't had curry for a long time. So I made chicken pumpkin curry with homemade Thai yellow curry paste. When I first moved to Buenos Aires, there was a lady from Indonesia living in our neighborhood. It was very rare to see SE Asian people in the southern hemisphere and I was hoping to get to know her better. Unfortunately she and her family were getting ready to move back to their home country soon after my family ...

Gluten-free Pumpkin Rice Donuts

December 7, 2015 by Holly Ford 2 Comments

Pumpkin RIce Donuts

I had a piece of butternut squash that I was not sure what I was going to do with. I could have made pumpkin soup with it, but decide to take on a sweeter side. I made donuts - with rice flour. Delicious~! Since it is made with rice flour, these little donuts are totally gluten-free. They are extremely crispy on the outside and very chewy inside. If you like Korean style rice donuts, you will love these pumpkin variation sweet treat. I posted sweet potato rice donuts recipe several years ...

Pumpkin Mushroom Risotto with Bone Marrow Soup

September 29, 2015 by Holly Ford 5 Comments

Pumpkin Mushroom Risotto

I like risotto. It is comforting, easy to make, and versatile. I had some leftover Korean Ox tail bone marrow soup that I made the other day and thought of making risotto with it. I didn't have any Arborio rice on hand so I used Korean short grain rice and I was satisfied with the great result. Soak white short grain rice for 20 minutes and drain. ...

Pumpkin Bundt Cake with Cream Cheese Maple Glaze

Who wouldn't want a piece of moist cake drizzled with the delicious cream cheese glaze? Although I am enjoying the beautiful warm weather in southern hemisphere. I miss seeing the neighborhoods lined with maple trees, and the houses decorated with pumpkins and fall leaves.  I have been craving the flavor of fall. Pumpkin is one of them. I purchased a dozen cans of organic pumpkin puree and I had to make something that can satisfy my fall craving. I baked the pumpkin bundt cake and drizzled ...

Korean Pumpkin Pancakes

Korean Pumpkin Pancakes

Pumpkin is, perhaps, the trademark vegetable of Autumn and here I am... posting one pumpkin recipe in the spring time. (Oh, Holly! Be aware of season! ) I went to a grocery store to buy zucchinis but came home with a piece of pumpkin instead. All because, when I saw a few displayed on the shelf, I felt bad that I didn't eat enough pumpkin last fall. ...

Deep Fried Winter Vegetables, healthy or not?

January 31, 2012 by Holly Ford 13 Comments

Every winter I miss one particular snack that I used to get as a child in Korea. Loaded with thinly sliced winter root vegetables, and coated with simple batter, then deep fried in hot oil..., this deep fried vegetables are perfect winter snack not only on the streets of Korea but in any household. My dilemma is that, can this be considered as healthy? Well, yes and no - depends on how you see it.I would like to consider it to more of "yes" side.Root vegetables are packed in nutrients and ...

Fall Rice in Pumpkin

October 26, 2011 by Holly Ford 7 Comments

Halloween pumpkin-rice

Last October around this time I was in New England enjoying the fall foliage. The beautiful maple and oak leaves turning into orange and red, smelling the batch of hot clam chowder, looking through the displays of Jack-o'-lanterns on every house, I literally soaked up myself with seasonal beauties. This year? Well..., the scenery has changed. I am surrounded by the palm trees, and the famous Patronas twin towers can be seen through my bedroom window. Yes, I am in Kuala Lumpur, ...

One week left for $50 CSN Stores gift certificate giveaway. Don't miss the chanceto win! We all know the story, "Goldilocks and the three bears". Too big, too small..., too hot, too cold...,  after all the ordeal Goldilocks finally finds her perfect "just right" things in the bear family house, and gets comfy. The story sometimes makes me compare Goldilocks as my own image in life. Yes, there is some lesson we learn from the story, though. Respecting other people's possessions or ...
