I have a very special guest to introduce you today.

Her name is “Soonja”, and she is about to enjoy her black spaghetti with sausage and pesto for Halloween dinner she made.

Soonja, the Halloween doll, is sitting lonely.

Yes, she is a good old retired Halloween witch. She visits me on the month of October every year and sits in my living room before she goes back to where she came from.

Soonja is usually quiet sitting on her favorite spot in the room and watching the whole world passing by in front of her eyes. But when it comes to a time that I play with food for Halloween?, she has to stick her nose on me and tells me what to do. I have to listen to her. Otherwise she might cast a naughty spell on me. Who knows? She might turn me into a bat or a mice.

Okay Soonja! We are going to make your spooky Halloween pasta, Black spaghetti with sausage and pesto. Are you going to tell me how to make it?

Vaash your hands fust” Soonja demanded. So here we go… I washed my hands and we were ready to start.

Ingredients You’ll Need

  • 1 package black spaghetti
  • pork sausage or any kind you like

For homemade Pesto sauce:

  • fresh basil leaves
  • pine nuts
  • garlic
  • grated Parmesan cheese
  • extra virgin olive oil
  • salt and pepper

Black Spaghetti for Halloween

Black spaghetti is made with squid ink.

Here is black spaghetti and some pork sausages. Blackness of this pasta comes from the squid ink. Yes, it is edible and is NOT fishy.

You might be able to get this type of pasta at the international shops such as Trader Joe’s or World Market, etc.

How to make Halloween Black Spaghetti Dinner

“Poke the little piggies vith zpagetties…, as many as you vant”

Boil sausage spaghetti in the water until cooked.

“Cook them in the boiling vater until the oodles are as tender as you vish… Tender piggies are so juicy, Eeee-hee-hee-hee!”

Pesto sauce is made in a food processor.

“Make green pesto to go vith. The greener, the better… We, witches, luv green…”

Drain the sausage black spaghetti in a colander.

“Drain the oodles and the piggies, and mix vith pesto. That’s all, dear.  Isn’t that easy?”

“Surely is, Soonja. Did you come up with this idea?”

” I fust had this pasta at annual GOWP monster potluck paaty.”

“What is GOWP?” I asked.

“Grand Old Witch Paaty, dear. I am not a member there anymore though. I lost my broomstick and they kicked me out. Too much politics to explain. Anyway, my dear friend, Frankenstein, brought this and everyone loved it. Everyone…, except my neighbor, Mr. Dracula. He just couldn’t stand it”

“Well, what did he eat then?” I quietly asked.

“He just drank Bloody Mary and munched on eyeball cookies that Cousin Itt brought. Vell, looks like our creepy pasta is ready to serve. Vould you like to take a bite?”

“Uuuuhh…” I hesitated. Because they looked like Medusa’s hair just got shampooed.

“You vill like it, my dear.  Trust me…, Eee-hee-hee-hee”  She squealed.

I took a bite. I choked and vomited…

(Just kidding!)

To my surprise, it was quite tasty. Who would have thought a witch can help me make such a scrumptious pasta?

“How is it, my darling?” She asked.

“Creepy good, Soonja!” I answered with my mouth full slurping a piece of strand sneaking out on the side of my mouth.

“Oh, Soonja, You have taught me so much. I am looking forward to make more wonderful dishes with you.”

“Alright, dear! I am tired now. I better go rest.” Her long skinny legs were dangling down lifelessly as I moved her to her favorite spot. I was feeling a little sad because my broomstick-less old witch friend has to leave in a few days.

I polished off the plate and moved on to my everyday chores. I am grateful that I have Soonja inspiring me to be whimsy every Halloween.  I like inspiring people (or witch).

Black Spaghetti with Sausage and Pesto

This Black spaghetti with sausage and pesto is a great dish to serve for Halloween dinner. It is a quick and easy pasta dish, and it won't gross you out like some other extreme Halloween food would.

Ingredients

  • 1 package (16 oz) black spaghetti
  • 1 lb pork sausage or any kind you like

For the Pesto sauce:

  • 2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • salt and pepper, to taste

Instructions 

  • Cut sausage into about 1-inch size chunks
  • Poke 6-10 spaghetti noodles through each sausage pieces. When done, drain the noodles and drizzle olive oil to prevent them from sticking.
  • Boil water and cook sausage spaghetti noodles according to package directions, about 9 minutes.
  • To make pesto sauce, put basil, pine nuts, garlic, and Parmesan cheese in a food processor. Pulse them together as you drizzle the olive oil through a tube until well blended. Season with salt and pepper.
  • Toss the spaghetti with pesto sauce and serve.
